squishy squash muffins

these yummy little numbers are tasty, easy to make, and perfect for breakfast on the go.

…and no animals were hurt to make them!

squishy squash muffins recipe

2 servings of Energy Egg Replacer

1/4 c agave or maple syrup

2/3 c melted coconut oil

1/2 vanilla bean insides

3/4 c squash of choice

(it really is best if you steam and mash up a real squash!)

1 c gluten free baking flour

1 tsp baking power

1/2 tsp baking soda

1 tsp nutmeg (invest in the good stuff!)

1 pinch of sea salt

makes 9 muffins

bake at 350…for about 25 minutes…enjoy!
